In a nutshell: this is a large pancake that is baked in the oven. You don’t need to bake several pieces, stand over the pan and turn them over. Once – and it’s done.
If you do not add sugar, the pancake can be served with bacon, feta, lightly salted salmon, sun-dried tomatoes, salad or vegetables.
The sweet option can be supplemented with powdered sugar, jam or jam, fresh fruit, caramelized apples or pears, sour cream or aerosol cream.
If you don’t add sweet ingredients to pancakes, but replace them with, for example, dried garlic, paprika, Italian herbs, you’ll get a lush omelet. We highly recommend adding cream cheese to it.

The recipe is attributed to either German or Dutch roots. It is said that these pancakes were first served in Seattle at Manca’s restaurant, and since then they have gained popularity. In the comments on the New York Times, people share that similar dishes were prepared by their grandmothers and called them differently: Finnish pancakes, Dutch babies, Ugnspannkaka (translated from Swedish “pancake in the oven”). User Eric writes that his lumberjack grandfather considered this breakfast the best way to start a day full of hard work. User Debbie writes that her mother used to make such a pancake and topped it with caramelized apples for the holidays. We tried to prepare just such.
According to the original recipe, you need 5 eggs, the comments advised less. Checked: 3 will do just fine.
Ingredients:
- 130 g of flour
- 240 ml of milk (room temperature or warm)
- 3 eggs (room temperature)
- 1 tbsp. sugar (two in the original recipe, add to taste)
- 1 tsp vanilla sugar
- 0.5 tsp of salt
- 57 g of butter
additionally:
apples, sugar, cinnamon, butter
Preparation:
First, turn on the oven to heat up to 200°C together with a metal baking tray measuring approximately 20×30 cm. Ours was a little smaller, so the pancakes turned out with more lush sides.
A ceramic mold is not suitable for this recipe: it can flake from the temperature difference when you pour the dough.
Meanwhile, put the eggs, milk, flour, sugar, salt, and vanilla sugar in a blender bowl and beat for 10-15 seconds on high speed. The dough will turn out to be very thin – that’s how it should be.
When the oven with the tray is heated, put the butter in it. When it melts, spread it evenly over the surface of the plate, quickly pour the dough in the center and put it to bake for 15-20 minutes. When baking, focus on your oven: the pancake is ready when the middle of the dough begins to take on color.
It looks simply divine in the oven – but then, unfortunately, it settles. Don’t worry: that’s how it should be.

Meanwhile, caramelize the apples: put a little butter (about a teaspoon) on the pan, add sugar (we use 1 tablespoon) and cinnamon to taste. Stir for half a minute, add diced apple. Cook over moderate heat for 2-3 minutes, stirring occasionally.
This is how my children’s breakfast according to this recipe looked: they like dried cranberries, caramelized apples and sour cream.
