You will need: Rybay steak, tomato, broccoli, olive oil, lemon, parsley, cilantro, garlic, chili pepper, wine vinegar, kumin and salt to taste.
In his Instagram, Katsurin described in detail all the stages of cooking:
- We remove the steak from the refrigerator and bring to room temperature;
- Thoroughly salt large salt on all sides;
- Prepare chimichuri sauce: cilantro leaves, parsley, garlic, kumin, olive oil, wine vinegar and hot pepper are cut with a blender and salt to taste;
- Prepare broccoli for the garnish: in salted boiling water blanch and quickly fry on fire with olive oil and lemon fresh;
- We return to the steak: fry for two minutes on both sides, give a rest for three minutes and cut, salt, pepper to taste.
The restaurateur also showed how best to serve on the table.
