Masnitsa, Maslyana, Masnitsa, Start, Syrupy, Cheese or Curve Week annually in Ukraine begins 56 days before Easter, a week before Lent. In 2025, Masnitsa will be celebrated from February 24 to March 2 on the Novoyan Calendar.
Most researchers of the Ukrainian calendar ritual agree that the main dish on Masnitsa were dumplings with cheese. Therefore, discussions are still underway in Ukraine whether pancakes are indeed a traditional Masnitsa dish or whether this custom is Russian.
“As for me, the theme of food on the Masnitsa is reminiscent of the question of what Ukrainians put on Christmas holidays: a Christmas tree or a grandfather. So here: pancakes or dumplings, ”said Yarina Zakalska, a leading specialist in folklore folklore and ethnography of Taras Shevchenko National University of Kyiv.
She emphasizes that some scholars call into doubt that pancakes were prepared in Ukraine, but this is not quite true. This is a very ancient Ukrainian dish. Ukraine was prepared and ate. There is even a long -standing saying: “The first pancake is to naught.” That’s actually, the prisoner is the first pancake. In particular, in Zhytomyr region pancakes were baked in the so -called Dmitriev Saturday, that is, on November 21, when the dead were remembered. According to ancient Ukrainian custom, one of the functions of making pancakes is the commemoration of the dead.
