However, not all oils are created equal. Obtaining cream and further processing lead to very different finished products. Here’s some basic information about butter to help you learn more about this incredible food and choose the right one—whether you’re planning to cook with it or just eat it with a piece of delicious, fresh bread.

A few words about fat percentage

Most commercial oils contain about 80% butterfat. If the product contains less than 80% butterfat, it cannot be called butter – most are sold as spreads. There’s an old saying that says, “Fat is flavor,” and we can’t help but agree with it. The higher the butter fat content, the richer and tastier it will be.

More butterfat also affects the texture of the butter. The one with more fat will be richer, smoother and easier to spread. The consistency of butter from small grass-fed dairies will vary throughout the year as the animals’ diets change. In the summer, the butter will be a little softer than room temperature because the quality of the saturated fat changes when the cows eat juicy green grass. In the winter, the butter becomes a little harder at room temperature due to the cows eating dry hay and grain.

Nutritional value

Butter is mostly fat, but it also contains nutrients essential for health, such as vitamins A and E, riboflavin, niacin, calcium and phosphorus. Vitamins A and E are fat soluble, meaning your body needs fat to metabolize these nutrients.

Oil from grass-fed animals contains more healthy unsaturated fats and Omega 3 fatty acids, which have positive effects on heart, brain, eye and lung health, and may reduce the risk of heart disease and some cancers.

How to choose good butter

Butter has a shelf life of about 3 months. However, depending on storage conditions before and after purchase, it can spoil faster and give your baked goods and food a bitter taste.

  • Check the expiration date on the package. This date should be the first indication of freshness. If the date is nearing the end or has passed, the oil is most likely stale.
  • Check how the oil was stored. Butter should not be exposed to light during storage. Therefore, it is carefully wrapped, preferably in foil. If it has been opened, it risks becoming rancid faster than even the recommended shelf life.
  • Study the color. Cut a small piece of butter. If it’s the same inside as it is outside, it’s still fresh. However, if the inside of the oil is lighter than the outside, it means that it has oxidized.
  • Smell the oil. If you use and consume the oil a lot, it should be obvious when it no longer smells fresh.

How to check the quality of oil at home

  • Drop a piece into boiling water. If a stain of fat appears on the surface of the water, the product can be considered natural. If the oil contains impurities of palm oil or other fat, it will not melt, but will fall apart.
  • Cut the frozen butter. If it splits into pieces, the product is natural, and if the slice is even, the oil has impurities.
  • Melting test. If you melt butter in a pan and it melts evenly and smells nice, the product can be considered natural. If the piece smokes, foams and emits water, it is better not to use it.
